Method A: edit the title in the wizard or table of contents properties

If you created an advanced table of contents that appears in the project outline, by running Format | Book | Build Table of Contents, you can enter the title in one of the wizard pages. You can change it later via Project Properties/Indexes/Contents/Properties (the last button at the top of the window). When you run the table of contents wizard again, it will replace the title. Also you can type the name into the actual table of contents page, but this will be overwritten if you regenerate the TOC.

If necessary, also edit the name of the section by clicking on the title area just above the editor, or using Document | Edit Title, or by right-clicking over the document in the project outline and clicking Properties to edit the document properties, including the title.

Method B: use a string table

This method works with both simple and advanced tables of contents.

First, add a global string table via Preferences/Strings (or a project string table via Project Properties/Strings) and add a string "Table of Contents". Make the value the replacement string, e.g. "Table des matières".

Next, in Project Properties/Configurations, set the option Global string table (or Project string table if you have used a project string table) to the name of the string table you created. Do this for all configurations you are planning to use.

Now the table of contents will have the correct title after you have compiled the ebook. ("Table of Contents" is one of a small set of strings that Jutoh replaces with values found in string tables, though you can extend this to arbitrary strings.)
