Jutoh automatically replaces straight double and single quotation marks as you type with curly quotation marks. This behaviour can be modified via the Auto-Replace page in the Preferences dialog. Also, you can undo the last automatic replacement with Edit | Undo or Ctrl+Z.
If you have imported an existing file into your Jutoh project, you may have straight quotation marks. You can turn these into curly quotes via the Formatting Cleanup command on the Book menu. Check Replace straight quotation marks to replace all straight quotation marks throughout the project.
