There are several aspects to image size:

  1. The original width and height of the image, as pasted or imported into the Jutoh project.

  2. The width and height specified in the image properties. These help the image to be displayed at an appropriate size on the screen, but do not affect the original image size; so if your book is 2000 pixels wide, the viewer still has to load a 2000-pixel-wide image before resizing.

  3. The width and height of the image as output to the ebook file, which can be restricted to a maximum via the configuration option Maximum image width or Maximum image height.

You can see the original image size if you click on an image and look at Original size in the Picture tab. If you then click on the Size tab, you will see the size that can be (optionally) specified to resize the image appropriately for the display.

If you suspect that large original image sizes are causing failure to load in some ebook viewers, or are slowing down page turns, you can use your configuration(s) to restrict the image size as written to the ebook. Edit your configuration (click Edit next to the current configuration), and edit the option Maximum image width. To make sure no images in the compiled ebook are more than 1000px wide, enter 1000 into this field, click OK, and recompile.

This won't affect images in the Jutoh project itself, but the generated ebook will contain smaller images, which may have a better chance of working on devices with limited memory.

To resize an image individually, you can click Edit in the image properties to edit the image in an appropriate application. Or, right-click over the image, copy the image to the clipboard, then edit the image properties and click Paste, which will replace the image without resetting the other image properties. Or you can use Export and Import in the image properties to save the image to a file, edit it with another application, and import it again.
